After getting through what seemed to be the longest week ever, Sunday finally rolled around. I love Sundays. It's brunch, mimosas, good company, being lazy....it's everything.
This Sunday has been particularly wonderful. Waking up to perfect weather and cuddling with my boyfriend for an hour was how it began. Soon after opening my eyes I was starving, so brunch plans were made.
We decided to stay local and head to Casa Enrique here in Long Island City (Queens). We've been here a couple of times for dinner, but never brunch. I was craving a Mexican breakfast like my father used to make me back in Florida. I can tell you that I've been to very many Mexican restaurants around NYC for brunch, and I have yet find a place that comes remotely close to my dad's cooking.
Well....These Huevos Rancheros came pretty damn close! The were so delicious and cooked to perfection. I am absolutely thrilled to know I can now get a kick of real Mexican food just a few blocks away.
The boyfriend left to the recording studio, so I was left alone the rest of the day. The wether was so beautiful I didn't want to waste the day trapped inside. I headed up to my roof, popped Peter Yorn on Spottify, and started reading #GIRLBOSS. It was perfect.
